Mother’s Day recipe for kids to make: Minty Dip

An easy, savory recipe from "Peppa's Yummy Cookbook."

“Peppa’s Yummy Cookbook” is full of recipes that are particularly easy for young children to make — like this fresh dip. If the vegetables need to be cut up, an adult should wield the knife. But kids can rinse the veggies and mix the dip.

Minty Dip

Yield: 4 or more hearty helpings

INGREDIENTS

  • Half a cucumber
  • Handful of fresh mint leaves
  • Optional: Crushed garlic clove
  • 7 ounces Greek yogurt
  • Salt and pepper

DIRECTIONS

Have an adult slice the cucumber in half lengthwise. You can help use a teaspoon to remove the seeds.

Coarsely grate the cucumber and squeeze out the excess liquid.

Coarsely chop the mint leaves.

Put the cucumber, mint, yogurt and garlic (if using) into a bowl, add a little salt and pepper, and mix.

Serve with carrot, celery and cucumber sticks for dipping. Pita bread slices are another good dipping option.
